Ramen Bar Ichi in Midtown does authentic tonkotsu ramen with 18-hour bone broth. The spicy miso with chashu is $16 and soul-warming. Small cozy space, counter seating where you can watch the chefs work. Houston's ramen scene has exploded and this is the standard-bearer.
