Third visit to Nixta and I'm bringing out-of-town guests now. The seasonal mole is different every time. The nixtamalized corn tortillas are the foundation everything rests on. $18-24 per dish. This is the most important food being made in Austin. James Beard recognition incoming.

Nixta Taqueria on East 7th does corn-focused Mexican food that's unlike anything else. Blue corn tlayudas, handmade tortillas, seasonal fillings. $12-16 per plate. Everything is made from heirloom corn nixtamalized in-house. James Beard nominated for a reason. Go early — they sell out.

Second visit to Nixta and tried the seasonal tlayuda with mole negro. $16. The depth of flavor from house-nixtamalized corn is something you can't get anywhere else. They also do weekend specials that sell out by noon. This is the most important restaurant in Austin right now. Go. Multiple times.
